Cow milk belongs to group of potential food allergens. That is substances of protein nature that produce pathological conditions in over sensitive individuals characterized by abnormal response of man's immune system. Cow milk contains more than 20 various proteins. However, only a few out of them are capable of producing immune response accompanied by pathological and physiological effects /casein, ί-lactoglobulin and α-lactoglobulin/. Increased antibody levels against cow milk in human serum are indicators of allergic diseases with dermatic symptoms /atopic eczema, urticaria/, gastro-intestinal symptoms /infant colic, diarrhea, vomiting/ and respiration symptoms /flu, frequent wheezing/.
